“Hi, I’m Sheila Chacko Kallivayalil. I’ve always considered baking as my forte and if anyone had told me that someday I would be making and selling jams and pickles, I would have been wholly surprised. Till a few years ago, I had never even thought about getting into what I do today. For pickles, I was well supplied by my mother and there was a constant flow of jam from my mother-in-law’s kitchen. Both were excellent cooks.
My earliest memories of food are of my grandmother and her large, old fashioned kitchen in the Kanjirappally house. That kitchen was the place where she made fantastic food and that’s where I learnt about flavours. She made sure no matter how humble the dish, it would become a masterpiece in her hands and because of that, eating was a pastime at her house. I remember the table always groaning with food. She was always eager to learn new recipes and experiment with food and that’s what I try to do with my pickles.
Most of my pickles and jams are made from traditional family recipes – recipes that are handed down over generations – and like in old fashioned kitchens, there are no artificial preservatives, additives or colouring. We pride ourselves on cultivating the organic produce that fills our pickle jars, ensuring authenticity and quality in every jar of organic jam and honey from Kerala.
The only concession I make is that I use synthetic vinegar because the natural alternate, coconut vinegar, simply doesn’t give the desired taste.
I make my pickles and jams as I would for my family, no shortcuts. Sometimes, people call me and tell me my pickles and jams are just the way their grandmothers used to make it and that gives me a kick – triggering people’s childhood memories through my food, that’s my greatest motivation.
